Four Flowers Juice
Makes 8 to 12 generous servings
Four Flowers is the signature beverage at Sarabeth's- filled ,with tropical flavors,
it has a rich texture that makes it more satisfying than other fruit drinks. (It's not
actually made with flowers, but as all fruits are flowering to some extent, I
couldn't resist the name. The recipe makes a large amount, but it is difficult to
make in any smaller quantity. Any leftovers can be turned into a smoothie by
whirling in a blender with a scoop or two of frozen yogurt.
- 1 ripe pineapple
- 2 cups fresh orange juice
- 4 ripe bananas
- 3 tablespoons pure maple syrup
- 2 tablespoons grenadine
- 1 tablespoon fresh lemon juice
- 8 to 12 whole strawberries, for garnish (optional)
- Remove the crown and cut away the pineapple skin. Trim away the eyes.
Cut the pineapple lengthwise into quarters. Cut off the thick core from each
quarter. Slice half of the pineapple lengthwise into long spears, wrap in plastic
wrap, and refrigerate until ready to serve.
- Chop the remaining pineapple into chunks. In a food processor fitted
with a metal blade, puree the pineapple with 1/2 cup of the orange juice. Pour
into a large pitcher.
- In the same food processor, puree the bananas with 1/2 cup of the orange
juice. Stir into the pitcher. Add the remaining 1 cup orange juice, maple
syrup, grenadine, and lemon juice. Cover and refrigerate until well chilled.
- To serve, pour the juice into large glasses. Garnish each with a pineapple
spear. If desired, cut a slit halfway through the pointed end of each strawberry
and perch one on the rim of each glass.
